It’s that time of the year when people are prepping for their Christmas celebrations. While the rich plum cakes and grape wine can wait for a few more days, how about some of my favourite pork dishes to explore in Kochi? Keeping the local recipes aside which are commonly available across many restaurants, here I wish to focus on some craft recipes which are curated by a few individuals and cafes out of sheer passion.
Kochi’s cafe culture has picked up in recent years and one such place that caught my attention is The Big Bang Cafe. With many dishes specially picked from South America, my favourite one is their Brazilian Pork. It is a grilled pork belly served along with sun-dried tomatoes, chimichurri and veggies in a tortilla.
Rebbi’s House of Barbeque:
Undoubtedly the best place to hit for anything related to BBQ. Joel a 27-year-old, who started this home barbecue has now become Kochi’s sole pit-master who specialises only in Pork and Beef. What comes out of his burners are just briskets and Pulled pork!
Tony’s Kitchen:
Another place to check out is Tony’s Kitchen, who makes succulent and delicious Japanese style barbecue pork, which is one of the main components of his Tonkotsu Ramen. The authentic Japanese style broth which is made with Mirin, Soy, Ginger, Dried Shrimps & Shiitake Mushrooms also adds to its signature taste. The CharSiu pork belly is roasted in over for around half a day, and the texture of the meat is to kill for!
